If there is one thing that I’ve consistently struggled with in my life, it is the evening dinnertime battle.
I lack the energy and creativity to fix up a good meal for my family in the time frame I’m faced with. (Meaning – the 20 minutes between arriving home from work and getting to soccer practice.)
Aside from hiring my own personal chef, I’ve found a pretty terrific solution to help with this nightly conundrum – Flatout Thin Crust Flatbread. (Insert heavenly choir here.)
The beauty of Flatout Flatbread is that it can be used to create delish pizzas that even the pickiest person will love. The sky is the limit when it comes to topping combinations – feta, basil, jalapeno pepperoni, artichokes, mushrooms, chicken… you name it. I found tons of recipes online with combinations that range from traditional pizza to extremely health conscious varieties.
Dinner is literally created in less than 10 minutes. YES. You read right. Less than 10 minutes. The kiddos even got involved in the process. (Miracle of all miracles!)
Flatout® Thin Crust Buffalo Chicken Pizza
Ingredients:
- 1 Flatout® Thin Crust Flatbread Rustic White
- 1/2 cup cooked and shredded chicken breast, without skin and bone
- 2 Tbsp hot sauce
- 1/4 cup cooked corn kernels
- 1 (4.5g) slice reduced-sodium bacon, cooked, chopped
- 1/3 cup shredded part-skim mozzarella cheese
- 1/2 large celery rib, sliced into small pieces
Instructions
Preheat oven to 350°F. Place flatbread on a cookie sheet. Bake two minutes; remove from oven. Meanwhile, toss chicken with hot sauce and corn in a medium bowl. Top flatbread with chicken mixture, bacon, cheese and celery. Return to oven and bake 4 more minutes.
