My 21 Day Fix – Week 2

Well, week two has passed and we are still seeing some good results with the program!

I actually only lost one pound this week but I feel tremendous. My clothes are fitting much better this week and I’m really encouraged. I’ve lost a good three to four  inches off of my waist already.

I’m getting used to portioning and packing my own food and have a much easier time at resisting the every day temptations of life. I personally like to keep my meal plans simple and rotate them every two days. One thing that has remained constant is my use of salads at lunchtime. I generally have a 1-2 veggie portion for the base of the salad along with feta cheese (blue container) homemade salad dressing (orange container) and a protein of some sort (steak, fish, chicken).

I recently discovered a non-traditional salad option that really keeps me filled during the day. My husband wasn’t on board at first (because it doesn’t have lettuce like traditional salads) but honestly, once he tasted it he was sold.

Savory Cottage Cheese Salad

Serves: 2
This savory protein-rich salad is healthy and filling and is perfectly suited for those following the 21 Day Fix program!
Ingredients
  • 2 C. cottage cheese
  • 4 green onions, sliced
  • 4 roma tomatoes, diced
  • ½ cucumber, peeled and diced
  • ½ c. Feta cheese crumbles
  • Black pepper to taste
Instructions
  1. Chop veggies into small pieces. Toss with cottage cheese. Add Feta and black pepper.

I find that much of my free time these days is consumed with either exercising, prepping food or cooking. Traditionally, I’m not one to enjoy spending time in a kitchen. Just something in my makeup, I guess. (I’d much rather sip a cocktail while reading a book.) That being said, with my priorities changing, so have my personal preferences. I wouldn’t go so far as to say that I’m morphing into a foodie blogger but I certainly am becoming quite adept in the kitchen. An interesting side effect…

That change, plus the fact that I’ve practically weaned myself off of coffee = a bit of a identity crisis.

Who am I again?!

All joking aside, there is something to be said for good ole fashioned goal setting. I’m truly proud of how I’ve stuck with this program and the results I’m seeing. On the surface, it may seem like my 21 Day Fix journey is just about weight loss. But it is much, much deeper than that. It is about my taking control of my own life.

It is a huge reminder that I am indeed the master of my own destiny.
